Pesto Pasta Salad

Since the weather is getting warmer, and spring seems to finally (seriously, I thought winter was here forever!) be here, it means get togethers and barbeques aren’t far off. This recipe is perfect for them! Light, fresh, and full of yumminess! Or you can make it and keep it in the fridge for a week of lunches like I did. 

I used bow tie (don’t ask me to spell the actual name) pasta, but use Rotini or whatever your favourite is and it’ll be fine! I included pasta and chicken cooking and cooling time in the “Cook Time” so that you’re prepared for it. 

Serves: 6-10 people

Cook time: 1.5 hours

Prep Time: 15 minutes

Ingredients:

4 cups bow tie pasta

3 chicken breasts

2 cups grape tomatoes, halved or quartered

2 red peppers, diced

1 tsp lemon juice

3 tbsp pesto 

Directions:

Cook chicken and pasta as normal. Timing will depend on how big chicken breasts are and which brand of pasta you are using. Once cooked, and drained for pasta, set aisde to cool for about 1 hour. 

In a large bowl mix pasta, chicken and veggies until evenly mixed. Mix in lemon juice. 

Add pesto and mix until salad is evenly coated. You can serve immediately. This also holds well in the fridge for about 4-5 days.
