Oh my gosh! This is one of my favourite salads ever! You can get it in a lot of supermarket delis that have the counters with already prepared foods. It’s so simple to make at home tho. Crunchy, salty, a little sweet. It’s like perfect harmony.
I did use regular bacon here even tho turkey bacon would have made it healthier. I figured I wasn’t messing with a good thing. Feel free to do a straight swap for turkey or chicken bacon. It won’t make a difference.
As a note, cook time here is for the bacon and prep time is the time to put the salad together. Cook time may vary depending on how you cook the bacon.
Prep Time: 15 minutes
Cook Time: 15 minutes
6 slice bacon, crumbled
8 cup broccoli florets, bite sized pieces
1 red onion, diced
3/4 cup sunflower seeds, no shells
1 cup sultana raisins
1.5 cups mayo
3 tbsp rice wine vinegar
1/3 cup sugar
Cook bacon throughly, set aside to cool. In a large bowl mix broccoli, onion, sunflower seeds, and raisins. Crumble in bacon once cooled.
In a small bowl mix mayo, sugar, and rice wine vinegar. Stir until it’s smooth and well combined.
Pour sauce over the salad, mix well so the entire salad is coated. It should just be a thin coating.
